Sharp Cheddar Cheese Crackers


  • 4 tbsp. (1/2 stick) butter, at room temperature
  • 8 oz. sharp cheddar cheese
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 cup flour
  • 2 tbsp. water

For Chili Cheese Crackers:

  •  1/8 tsp. garlic powder
  • ¼ tsp. chilli powder
  • 1/8 tsp. ancho chilli powder
  • 1/8 tsp. smoked paprika


1. In a bowl of an electric mixer, beat the butter, cheese, salt, and pepper on low-speed. Add the flour. The mixture will be dry and crumbly. Add 2 tbsp. of water one tbsp. at a time. Beat until the mixture JUST comes together into a ball. (It may take an extra tsp. of water, but not too should be moist not wet!)

2. Divide the dough in half, and add the chilli ingredients to half of the dough. Knead the spices in, and refrigerate the dough for 30 minutes. Preheat the oven to 375°F

3. On a floured surface, roll out the dough thing (1/8th of an inch) Dot the center with a fork. Place on baking sheets and bake for 13-15 minutes until golden brown and crisp. Allow to cool.
